The explanation behind the name for Pizzeria Seven Twelve is simple. They cook their pizzas in a wood-fired brick oven at 712 degrees Fahrenheit. But the simple explanation doesn't quite cover what you are getting when you eat at Pizzeria 712. You are getting a meal crafted with ingredients that, whenever possible, are grown locally and organically. Their menu changes with the seasons. You won't find strawberries in a salad in the middle of winter. You will find fresh and bold flavors, and pizza made in a traditional Italian way. The crust is incredibly thin, and topped with top-quality ingredients, including hand-pulled mozzerella, thin and crispy Italian meats like speck and sopressata, and roasted fennel. Try a pizza with shaved grana padano, a parmesan-like cheese that gives your pizza a burst of salty flavor.
You'll want to get reservations, although it is possible to get in without them. And though the food is high-class, the atmosphere is casual. The staff is happy to answer questions you may have about the menu, and the prices, while higher than many pizza places, are not extravagant. Expect to spend as much as you would at a steakhouse. And expect to come away very pleased with your meal.
This is pizza worthy of being eaten in Italy. Of course, if they opened a franchise in Italy, they'd have to call it Pizzeria 378 (degrees Celsius).
